Chocolate cupcakes with vanilla icing.

Recipe

I added some Maltesers to the top for decoration, mini eggs or chocolate buttons also make great alternatives. This made 8 large cupcakes.








Ingredients

100g butter

100g self raising flour

75g sugar

2 eggs

2 tsp baking powder

20g cocoa Powder


Icing

140g butter

280g icing sugar

1-2 tbsp milk

two caps of vanilla extract




Method

-Preheat the oven to 180C.

- Mix the sugar and butter together till completely combined.

- Mix the flour and eggs and cocoa powder in to the butter and sugar mix.

- Then add the baking powder. You can also add chocolate chips or bits of chocolate in at this point if you like.

-Put the cupcake cases in the tray and add the mix to the cases.

-Finally bake in the oven for 20 mins, remove form oven and let cool before icing.



Icing

mix the butter, icing sugar, milk and vanilla together. If the icing is too thin to pipe then add cornstarch to the mix until its at the consistency you would like. Once your happy with the icing piped on the cupcakes you can add any toppings e.g the Maltesers.
